I like Seven Seas because it works for every kind of civ. For the exploration side of the game, I like maps like Continents and islands, Archipelago, Island Plates or Small Continents where you discover the map with naval units, following the coasts. An other map I play often is Inland Sea. It's good when you start on a different landmass from other civs, but if not you get stuck with a small amount of space until you can send settlers across water.
